
Ingredients:
- 1 Tbsp. Honey
- 2 1/4 Tsp. Dry Active Yeast
- 1 1/4 Cup Warm Water
- 540 Grams All Purpose Flour
- 2 Tsp. Salt
- 1 Egg
- Everything but the Bagel Seasoning, Sesame Seeds or topping of choice
Poaching Water:
- 1 1/2 Quarts Water
- 2 Tsp. Honey
- 2 Tsp. Baking Soda
- 2 Tsp. Salt
Instructions:
- In the bowl of a stand mixer, combine the warm water, honey and yeast. stir it together to make sure the yeast and sugar have dissolved. Make sure the water temperature does not rise from 110 degrees F.
- After 10 minutes, add the flour and salt. Make sure to start your stand mixer on low and slow work in the flour. Let the dough knead in the stand mixer for 5-7 minutes.
- Remove the dough from the mixer and place it in a lightly greased bowl and cover with plastic wrap or a moist towel. Allow to sit out on the counter for an hour and a half.
- Turn the dough out from the bowl and shape into a log. Cut it into 8 equal pieces. Roll each piece into a long enough strand to wrap around your hand. Press the two ends together by rolling the dough with your hand on the board. Allow to rest for 30 – 45 minutes.
- In a large pot, bring the quart and a half of water to a boil. Add the honey, salt and baking soda. Carefully, add in the dough balls, one at a time. Boil for about 1 – 2 minutes and remove to a baking sheet lined with parchment and lightly greased.
- Whisk the egg and add 1 Tbsp. of water to it. brush the egg wash onto each bagel. Sprinkle the seasoning of your choice on top or leave plain.
- Place into a 450 degree oven. Bake for 15-20 minutes or until golden brown.
- Remove and enjoy with cream cheese or make a beautiful sandwich!!
