Ingredients:

  • 1 Cup Butter, Room Temp
  • 3/4 Cup Sugar
  • 1 Egg
  • 1/4 Cup Lemon juice
  • 2 1/4 Cup All Purpose Flour
  • 1/2 Tsp. Baking Powder
  • 1/2 Tsp. Salt
  • 1 Cup Strawberries, Diced

Glaze:

  • 1 Cup Powdered Sugar
  • 1 Tbsp. Strawberry Puree, 2 Strawberries
  • 1 Tbsp. Lemon Juice

Instructions:

  1. Preheat the oven 350 degrees.
  2. In a Stand Mixer fitted with a paddle attachment, add the butter and sugar. whisk them together until they become creamy and fluffy. Add the egg and lemon juice and allow to mix thoroughly.
  3. In a separate bowl, combine the flour and baking powder and salt. Add them to the butter mix. Make sure to combine them completely. Scrap the sides of the bowl with a rubber spatula to make sure all the batter is well incorporated. Remove from the stand mixer.
  4. Carefully, fold in the diced strawberries with the rubber spatula.
  5. Lightly butter an 8×8 inch baking dish. You could also use a canola oil spray. Pour the batter into the baking dish and spread it out evenly.
  6. Place the baking dish in the oven and bake for 30 – 35 minutes.
  7. Once it is lightly browned, remove from the oven and set aside to cool.
  8. In a bowl, mash the 2 strawberries and mix in the lemon juice and powdered sugar. Pour it over the blondies and spread it out evenly.
  9. Cut into 8 squares and serve!
