
Ingredients:
- 1 Cup Butter, Room Temp
- 3/4 Cup Sugar
- 1 Egg
- 1/4 Cup Lemon juice
- 2 1/4 Cup All Purpose Flour
- 1/2 Tsp. Baking Powder
- 1/2 Tsp. Salt
- 1 Cup Strawberries, Diced
Glaze:
- 1 Cup Powdered Sugar
- 1 Tbsp. Strawberry Puree, 2 Strawberries
- 1 Tbsp. Lemon Juice
Instructions:
- Preheat the oven 350 degrees.
- In a Stand Mixer fitted with a paddle attachment, add the butter and sugar. whisk them together until they become creamy and fluffy. Add the egg and lemon juice and allow to mix thoroughly.
- In a separate bowl, combine the flour and baking powder and salt. Add them to the butter mix. Make sure to combine them completely. Scrap the sides of the bowl with a rubber spatula to make sure all the batter is well incorporated. Remove from the stand mixer.
- Carefully, fold in the diced strawberries with the rubber spatula.
- Lightly butter an 8×8 inch baking dish. You could also use a canola oil spray. Pour the batter into the baking dish and spread it out evenly.
- Place the baking dish in the oven and bake for 30 – 35 minutes.
- Once it is lightly browned, remove from the oven and set aside to cool.
- In a bowl, mash the 2 strawberries and mix in the lemon juice and powdered sugar. Pour it over the blondies and spread it out evenly.
- Cut into 8 squares and serve!
