
Ingredients:
- 1/2 Cup Butter, Room Temperature
- 1/3 Cup Brown Sugar
- 1/4 Cup Sugar
- 1 Tbsp. Vanilla Extract
- 1 Egg, Room Temperature
- 1 1/4 Cup Old Fashioned Rolled Oats
- 1 Cup All Purpose Flour
- 1/4 Tsp. Cinnamon or Pumpkin Pie Spice
- 1/2 Tsp. Baking Soda
- 1/4 Tsp. Salt
Instructions:
- Preheat the oven to 350 degrees.
- In the bowl of a stand mixer, cream together the butter and the sugars. Once they are fluffy, add the vanilla extract and the egg.
- In a separate bowl, mix together the flour, baking soda, salt and spices. Add the mixture to the butter and egg mix and add the oats. make sure they are fully mixed. Scrape down the sides of the bowl with a rubber spatula to make sure everything is well blended.
- Use a large cookie scoop or an ice cream scoop and scoop the batter on a parchment lined sheet tray or cookie sheet. Carefully press down on the batter mounds to slightly flatten them. Place the tray in the oven and bake for 10 – 12 minutes. They should be a light golden brown and still fluffy.
- Allow to cool to room temperature.
Icing Recipe:
- 3/4 Cup Powdered Sugar
- 1 1/2 Tbsp. Milk
- 1/4 Tsp. Vanilla Extract
Instructions:
- In a bowl, whisk together all the ingredients until they are creamy. Dip each cookie into the icing face side down.
- Place the cookies on a sheet tray or cookie sheet to set.
