Super delicious and elegant dinner!! Most importantly…. super easy!!

Ingredients:

1 1/2 tsp. Sesame Oil

2 cups Duck Meat, Left over from a roasted duck dinner, diced

5 tbsp. Soy Sauce

1 White Onion, diced

1 Green Bell Pepper, dice

2 large Eggs, scrambled

1 tsp. Garlic, minced

1 cup Bella Mushrooms, sliced

4 cups Cooked White Rice

Cilantro, for garnish

Directions:

  1. In a Wok or deep sided saute pan, heat the sesame oil and add the onion, bell pepper, mushrooms and garlic. Once the vegetables are translucent, add the duck.
  2. Fry the duck and veggies for 2 minutes. Scramble the eggs in the same pan and add the rice. Fry the rice for a few minutes until it starts to pop.
  3. Add the soy sauce and make sure to stir it vigorously. It should be thoroughly spread through the rice. Serve warm with a sprinkle of cilantro.
  • I recommend serving with the Spicy Honey Garlic Chicken.
  • If you do not have duck, you can substitute with chicken or no meat at all.
