
Super delicious and elegant dinner!! Most importantly…. super easy!!
Ingredients:
1 1/2 tsp. Sesame Oil
2 cups Duck Meat, Left over from a roasted duck dinner, diced
5 tbsp. Soy Sauce
1 White Onion, diced
1 Green Bell Pepper, dice
2 large Eggs, scrambled
1 tsp. Garlic, minced
1 cup Bella Mushrooms, sliced
4 cups Cooked White Rice
Cilantro, for garnish
Directions:
- In a Wok or deep sided saute pan, heat the sesame oil and add the onion, bell pepper, mushrooms and garlic. Once the vegetables are translucent, add the duck.
- Fry the duck and veggies for 2 minutes. Scramble the eggs in the same pan and add the rice. Fry the rice for a few minutes until it starts to pop.
- Add the soy sauce and make sure to stir it vigorously. It should be thoroughly spread through the rice. Serve warm with a sprinkle of cilantro.
- I recommend serving with the Spicy Honey Garlic Chicken.
- If you do not have duck, you can substitute with chicken or no meat at all.
