
For the Crust:
- 1 full sleeve graham crackers. I use the honey flavor
- 1 stick melted butter
- 1/4 cup sugar
Pulse the ingredients in a food processor until it is a fine meal. Press it into a pie dish evenly and bake at 350 degrees for 10 minutes. Remove the crust and cool completely before moving on to the next step.
For the filling:
- 1/2 cup Greek Yogurt or Sour Cream
- 2 – 14 oz. cans sweetened condensed milk
- 2 Egg Yolks, room temperature
- 3/4 cup key lime juice
- zest of 4 key limes or 2 Persian limes
Place all the ingredients in a blender and whip them for 4 minutes. The filling should be fluffy. Pour into the cooled pie crust and bake at 350 degrees for 20 minutes. Remove from the oven and cool at room temperature for 1 hour. Then place in the fridge for at least 4 hours or overnight. This pie is delicious with homemade whipped cream. Just whisk together 1 cup of heavy cream, 1/4 cup powdered sugar and 1 tsp vanilla extract. whisk until super thick! top each slice with the whipped cream and serve!
