
Ingredients:
- 12 Jalapenos, top removed, cored
- 4 oz. Cream Cheese, softened
- 2 oz. Cheddar Cheese, shredded
- 1 tbsp. Slap Ya Mama Seasoning
- 6 slices Bacon, your choice*
- Toothpicks*
Directions:
- In a bowl, combine the cream cheese, cheddar and Slap Ya Mama seasoning. Place the mixture into a piping bag or a Ziplock bag and cut a small piece of the corner.
- Fill the jalapenos with the cream cheese mixture. Wrap each jalapeno with half a slice of bacon. Pin it with a toothpick and place on your baking rack. I used a grill basket that I placed skewers into to create a grid.
- Place the rack into a disposable pan with a small amount of water, about an inch.
- Place the whole thing into a 300 degree oven for about 25-30 minutes. The bacon should be crisp and the pepper should be soft.
- I like to serve it with Hidden Valley Ranch for dipping.
- The toothpicks i use are the extra long kind. They stick out a bit more for a small handle.
- The bacon should be a thin cut bacon. Thick cut will take longer to cook.
